Prepare veggies (onion, jalapeno, and poblano pepper)and set aside.
Brown hamburger meat.
Add in veggies and cook for additional 4-5 minutes or until they are tender.
Mix in the corn, black beans, and the packet of enchilada seasoning.
Mix all ingredients together, and scoop into flour tortillas.
Roll tortillas and line in the bottom of prepared (spray with non-stick spray)casserole dish. Top with canned enchilada sauce, any excess filling, and shredded cheese.
Bake at 350 degrees for 15 minutes or until cheese is melted and bubbling.
