Southwest Beef Enchilada Recipe

This super easy Southwest Beef Enchilada Recipe screams Texas. It's the perfect mix of classic flavors with a little Southwest and Texas twist. I know your family will love this just as much as mine does!


  • 1 lb. hamburger meat
  • 1/2 medium red onion diced
  • 1/2 medium poblano pepper diced
  • 1/2 medium jalapeno seeded & diced
  • 1/2 cup frozen corn
  • 1/2 can black beans 15 oz
  • 1 enchilada sauce powder mix
  • 1/2 - 1 cup shredded cheese
  • 1/2 can enchilada sauce 15 oz


  1. Prepare veggies (onion, jalapeno, and poblano pepper)and set aside.

  2. Brown hamburger meat.

  3. Add in veggies and cook for additional 4-5 minutes or until they are tender.

  4. Mix in the corn, black beans, and the packet of enchilada seasoning.

  5. Mix all ingredients together, and scoop into flour tortillas.

  6. Roll tortillas and line in the bottom of prepared (spray with non-stick spray)casserole dish. Top with canned enchilada sauce, any excess filling, and shredded cheese.

  7. Bake at 350 degrees for 15 minutes or until cheese is melted and bubbling.
